Beef & pesto cauliflower gnocchi
Another quick and easy meal, the Beef & pesto cauliflower gnocchi dish has a mix of greens from the vibrant broccoli to the smooth basil pesto.
Ingredients
(Serving: 4 - 6)
1 lb 93/7 ground beef (swap for garbanzo beans for vegetarian/vegan option)
1 bag cauliflower gnocchi
1 container pesto (I prefer a dairy/free option from Trader Joe’s or you can make your own)
1/2 bag frozen broccoli
1 Tbsp olive oil
1/2 tsp garlic powder
1/4 tsp red pepper flakes
1/4 tsp salt

Instructions
Preheat oven to 425°F .
Toss 1 bag of cauliflower gnocchi and spread evenly on a baking sheet. Roast in the oven for 20-25 minutes, flipping halfway through, until golden and crispy.
While the gnocchi roasts, heat a large pan over medium heat. Add 1 lb ground beef. Cook beef until browned and cooked through, breaking it up with a spatula. Stir in 1/2 teaspoon garlic powder, 1/4 teaspoon red pepper flakes, and 1/4 teaspoon salt. Mix well and remove from heat.
In a separate pot, bring a small amount of water to a simmer. Add 1/2 bag frozen broccoli and cook on the stove until tender, about 5-7 minutes. Drain any excess water.
In the pan, combine the roasted gnocchi, cooked beef, steamed broccoli, and 1 container dairy-free pesto. Toss gently to coat evenly and warm together for 1-2 minutes. Enjoy!
