Prepped and ready for a busy week, these Breakfast pizza egg bites are full of flavor and protein. After having homemade pizzas one Saturday night, we had all the leftover ingredients and I didn’t them to go to waste. To maximize the weekly grocery budget and re-use ingredients I had at home, these savory Breakfast pizza egg bites were born.
Ingredients (4 servings)
8 eggs
1 pack pepperonis
1 jar pizza sauce
1/2 ball of mozzarella cheese (sub for 1 cup lactose free cottage cheese if dairy-free)
1 tsp Italian herb spices
1/2 tsp salt
Appliances & Utensils
muffin pan
muffin-tin liners
large mixing bowl
Instructions
Preheat oven to 375°F. Line or grease a muffin pan.
In a large mixing bowl, whisk the eggs until fully combined.
Stir in the salt, Italian seasoning, and mozzarella (or cottage cheese).
Layer a few slices of pepperoni in each cup.
Pour the mixture evenly into the lined muffin cups, filling each about ¾ full.
Top each egg cup with about 1 Tbsp pizza sauce.
Bake for 18–22 minutes, or until the egg cups are set and lightly golden on top.
Let cool for a few minutes before removing from the pan.
Store in an air-tight container in the fridge for up to 4 days. Remove the muffin-tin liners and heat in the microwave for 1 - 2 minutes before enjoying for breakfast.
Pro Tip: Swap the pepperoni and pizza sauce for cooked ground turkey for an alternative flavor profile.
