Chocolate peanut butter protein balls (no-bake)
For the chocolate and peanut butter lovers, these protein balls have a salty sweet, melt-in-your-mouth flavor. Packed with protein, these are a balanced option.
Ingredients

10 fresh Medjool dates
1/2 cup vanilla protein powder (Use code: GRACEANDGREENS for 10% off your order)
1 cup rolled oats
3 Tbsp peanut butter
1/2 tsp vanilla bean paste
1/4 tsp Kosher sea salt

Instructions
Add 1 cup rolled oats to food processor or blender and pulse until oat flour is created.
Add 1/2 cup vanilla protein powder and a pinch (1/4 tsp) Kosher sea salt to the oat flour. Blend briefly until combined.
Remove the pits from the 10 Medjool dates and add the dates to the blender/food processor, along with 3 Tbsp peanut butter and 1/2 tsp vanilla bean paste.
Blend until the mixture forms a sticky dough. You may need to pause and scrape down the sides a few times.
Transfer the dough to a bowl and stir with a spoon to ensure everything is well combined. Set in the fridge for 15 - 30 minutes to firm up.
Once chilled, roll the mixture into 10–12 bite-sized balls using your hands.
Place the balls on a plate or tray and refrigerate for at least 30 minutes to set. Enjoy for up to one week if placed in the fridge in an airtight container.
Pro Tip: If the mixture is too sticky, add more oats. If your mixture is too dry, add a dash of water.
