A delicious, herby dish this Garlic turkey meatball bowl with herby cashew sauce showcases the flavor that can be brought out using simple ingredients. This is a gluten/dairy-free bowl, but you wouldn’t know the difference. I recently discovered this quality, simple ingredient cashew cheese that is full of flavor. Whether you eat dairy or not, I highly recommend you give it a try.
Ingredients (4 servings)
1 lb ground turkey (swap for canellini beans for a vegetarian/vegan option)
2 cups brown rice (dry)
1 bag frozen green beans
1 pack cashew herb cheese
1 egg (swap for flax egg for a vegetarian/vegan option)
1 Tbsp olive oil
1 Tbsp garlic powder
1 tsp onion powder
1/2 tsp salt
pepper, to taste

Instructions
In a rice cooker or small pot, cook 2 cups of brown rice according to package directions. This typically takes about 30–35 minutes. Set aside when done.
In a mixing bowl, combine the ground turkey, garlic powder, onion powder, salt, pepper, and 1 egg. Mix until evenly combined. Form into small balls, about 12 - 16.
Heat a large skillet over medium heat and add olive oil. Add the turkey meatballs to the pan and cook for 5–6 minutes per side, or until browned and cooked through.
While the meatballs cook, place the frozen green beans in a microwave-safe bowl. Add a splash of water, cover with a plate or microwave-safe lid, and microwave for 4–5 minutes, or until tender. Drain any excess water.
In each bowl, add a scoop of brown rice, a portion of green beans, and 3–4 turkey meatballs. Top with a spoonful of cashew herb cheese for a creamy sauce. Enjoy!
Pro Tip: To give good flavor to the green beans, add a pinch of salt and a drizzle of olive oil right before serving. You can add this after draining the excess water and drying them off.
