I hope you had a lovely first full week of February! This month is special to me because both my cousin and I celebrate birthdays, and I also love celebrating Valentine’s Day. While there are lots of mixed opinions, it is sweet to reflect on all the people you love, whether platonically or romantically. Cooking a warm meal for someone is a great way to show that you love them. This week’s menu has 2 dishes that go wonderfully with the color scheme of the holiday - the salmon & broccolini dish and the crockpot red chicken chili (a special request from my husband!).
As you continue to navigate making healthy choices throughout your week, remember consistency is key. What extra veggie can you add in to your meals this week? What meal can you prep for breakfast so you feel energized for your day? There is a bunch of recipes on my homepage here, so you can eat healthy meals all week long. I know you can do this!
Menu
Let’s make it easier for you to eat healthy, nourishing meals every day this week!
Before we jump in to the details, here are a few things to note so that we can make these recipes work best for you:
Dietary restrictions? All of these meals are gluten-free & dairy-free and packed with veggies. For a more plant-forward option, swap the protein for beans.
Each recipe yields 4 servings—2 for dinner the night you cook and 2 for lunch the next day.
Cooking solo? You can freeze two servings for later or share meals with a friend.
For families, simply double the recipes to get two full meals on different days.
This meal plan starts Sunday night and ends Friday night. The weekends are for you to choose, or reuse something from the week.
