It’s another Saturday, I hope it is restful and you are able to do something you love today. For me, I will be celebrating a friend at her baby shower and preparing for a little surprise I have in store for the grace & greens crew. (Hint: It has something to do with cooking and a special guest!)

With it being the weekend, let’s talk about rest for a minute. There are many times of rest, but two main types that stick out to me are physical rest and mental rest. For mental rest, one of the best ways to get out of your head is through moving your body. My husband and I have loved rock climbing lately to rest mentally. If you are an adventure seeker or wanting to try something different, I highly recommend checking out rock climbing. There are surprisingly a lot of gyms that offer rock climbing along with fitness centers and even relaxing saunas (another one of my favorites!). For physical rest, I greatly enjoy getting sucked into a good story. Currently, I am reading ‘The Love Experiment’ by Christina Lauren and ‘The Let Them Theory’ by Mel Robbins. For some, reading 2 books at once can be overwhelming, but for me, I love having the choice depending on what my mood is. To try out something different, I ordered one of the books from my local bookstore and picked it up in-person!?! Wow, did this feel different than the usual order on Amazon and it arrives the next day by 4 am. Though I had to wait a couple of days, it was well worth it because I got to peruse the colorful bookstore shelves before picking up my book. For the month of February, I am focused on slowing down and being right where my feet are planted. Doing something like this helped me to slow down and be present. (Thanks for the inspiration Jodi Wilson and Caroline Chambers to head to my local bookstore!)

What are some of your favorite ways to rest? Let me know in the comments!

Before we jump in to the details, here are a few things to note so that we can make these recipes work best for you:

  • Dietary restrictions? All of these meals are gluten-free & dairy-free and packed with veggies. For a more plant-forward option, swap the protein for beans.

  • Each recipe yields 4 servings—2 for dinner the night you cook and 2 for lunch the next day.

  • Cooking solo? You can freeze two servings for later or share meals with a friend.

  • For families, simply double the recipes to get two full meals on different days.

  • This meal plan starts Sunday night and ends Friday night. The weekends are for you to choose, or reuse something from the week.
