Whether you’re heading out of town to visit family and friends for the holidays or sticking to your normal routine, you’ll need some easy & delicious meal ideas to keep you fed and energized. This week, I’ve curated a selection of meals that are simple to prep ahead of time or great for doubling up to share with friends and family. Let this guide check one thing off your to-do list this holiday season, giving you more time to enjoy the season however you choose.

Each meal is packed full of nutritious, in-season veggies that are available at most grocery stores. I visited the farmer's market last week and noticed an abundance of potatoes - sweet potatoes, purple potatoes, and russet potatoes - all packed with nutrients and a great source of energy. This inspired me to incorporate the different varieties throughout this week’s dishes.

Another fun addition is Tuesday night’s Chicken Peanut Pad Thai - a nod to the holiday classic A Christmas Story. (if you know, you know!)

Without further ado, here is what’s on the menu this week:

To Note:

  • Dietary restrictions? All of these meals are gluten-free & dairy-free and packed with veggies. For a more plant-forward option, swap the protein for beans.

  • Each recipe yields 4 servings—2 for dinner the night you cook and 2 for lunch the next day.

  • Cooking solo? You can freeze two servings for later or share meals with a friend.

  • For families, simply double the recipes to get two full meals on different days.

  • This meal plan starts Sunday night and ends Friday night. The weekends are for you to choose, or reuse something from the week.
