From the extra long weekend to the mid-week snow here in North Carolina, I hope this week has been a nice balance of excitement and relaxation in your schedule.
As I continue to build out these grocery guides, I am constantly pondering how I can make your life easier when it comes to making healthy meals for you and your crew (whether it be your spouse, your family, or your roommate). One of my secrets to making healthy easier is FROZEN VEGETABLES. I guess it isn’t too much of a secret now, but it is too good not to share. Since frozen vegetables are picked at their peak and frozen right after, they are packed full of nutrients that might not be available in those same fresh vegetables in the produce section if they are out of season. Not to mention, frozen vegetables are usually budget-friendly ~even the organic ones!~
This week’s menu is packed full of frozen vegetables and throughout the week I will share just how I cooked and seasoned them so you would never know the difference. I hope you enjoy!
Menu
Let’s make it easier for you to eat healthy, nourishing meals every day this week!
Before we jump in to the details, here are a few things to note so that we can make these recipes work best for you:
Dietary restrictions? All of these meals are gluten-free & dairy-free and packed with veggies. For a more plant-forward option, swap the protein for beans.
Each recipe yields 4 servings—2 for dinner the night you cook and 2 for lunch the next day.
Cooking solo? You can freeze two servings for later or share meals with a friend.
For families, simply double the recipes to get two full meals on different days.
This meal plan starts Sunday night and ends Friday night. The weekends are for you to choose, or reuse something from the week.
