Happy New Year! I hope your first week of 2025 has been off to a good start. Personally, I have really enjoyed the mid-week start to the new year because it allows us to ease into things after time off during the holidays. Instead of new year’s resolutions this year, I have a few focuses that I want to prioritize: striving for living in balance, continuing to improve upon grace & greens and support you all in eating healthier, and digging deeper in studying the Word (starting off with this book).

What are you focused on this year?

To Note:

  • Dietary restrictions? All of these meals are gluten-free & dairy-free and packed with veggies. For a more plant-forward option, swap the protein for beans. Many of these dishes can also be made Whole 30 compliant with a few swaps.

  • Each recipe yields 4 servings—2 for dinner the night you cook and 2 for lunch the next day.

  • Cooking solo? You can freeze two servings for later or share meals with a friend.

  • For families, simply double the recipes to get two full meals on different days.

  • This meal plan starts Sunday night and ends Friday night. The weekends are for you to choose, or reuse something from the week.

  • As always, if you have questions feel free to comment or message me.
