Enjoy the simple, yet flavorful combination of fresh veggies and protein with this High-protein beef taco bowl. From the vibrant avocados and crunchy green lettuce to the savory ground beef and black beans, this bowl is packed with flavor and nutrients. Protein provides your body with everything it needs to repair and maintain lean muscle. It can also keep you fuller for longer, making you less likely to snack on quick-energy foods, supporting your overall health. Make this dish your own with a fresh red or green salsa to top.
Ingredients (4 servings)
1 lb lean ground beef (swap for lentils or tofu for vegetarian/vegan option)
2 cps basmati white rice (omit for Whole 30)
1 can black beans (omit for Whole 30)
1 pack crunchy gem lettuce
2 avocados
1 Tbsp olive oil
1 lime
1 packet taco seasoning or use 2 tbsp of a homemade mix:
3 tbsp chili powder
2 ½ tsp onion powder
2 tsp smoked paprika
1 ½ tsp garlic powder
1 ½ tsp cumin
1 tsp oregano
½ tsp salt
1 container salsa (red or green)
pepper, to taste
Appliances & Utensils

rice cooker or additional pot

Instructions
Prepare 2 cups of basmati rice according to package instructions. While rice is cooking, proceed with the remaining steps.
In a large skillet, heat 1 Tbsp olive oil over medium heat. Add ground beef and cook until browned, about 7–9 minutes. Stir in taco seasoning (or homemade spice mix) and a splash of water. Simmer for 2–3 minutes until well combined.
In a small saucepan over low heat, warm the drained black beans. Add a pinch of salt if desired.
Slice the avocados. Cut the lime into wedges.
Assemble the bowls with a scoop of rice, seasoned ground beef, black beans, a handful of lettuce, sliced avocado, a spoonful of salsa, a dash of pepper on the avocado and a squeeze of fresh lime juice. Enjoy!
Pro Tip: If you are going to use the leftovers for lunch the next day, pop an ice cub on top of the rice when reheating in the microwave. This will keep moisture in when enjoying this bowl for leftovers.
