Thai turkey burgers
A twist on a classic, these Thai turkey burgers are placed a top a rice patty and paired with a sweet & spicy broccoli slaw. This is a great gluten & dairy-free option.
Ingredients
(Serving: 4)
1 lb ground turkey
3 cups white rice, dry
1 bag broccoli slaw
1/2 white onion
1 lime
1 Tbsp sesame oil
1 Tbsp crunchy chili oil
2 Tbsp coconut aminos
2 Tbsp cilantro, fresh
1/2 tsp ginger powder
1/2 tsp garlic powder
1/4 tsp salt
sesame seeds for topping, optional

Instructions
Rinse the 3 cups of white rice until the water runs clear. Cook the rice in a rice cooker or pot according to the package instructions, then set it aside to cool slightly.
While the rice is cooking, make the turkey burger patties. In a mixing bowl, combine the ground turkey, finely diced onion, coconut aminos, chopped cilantro, garlic powder, ginger powder, and salt. Mix until just combined, forming the mixture into 4 equal-sized patties.
Heat a pan over medium heat with sesame oil and cook the turkey patties for about 5 to 6 minutes per side, or until fully cooked through and golden on the outside. The internal temperature should reach 165°F. Once cooked, set the patties aside.
Next, boil the slaw. Bring a small pot of water to a boil, then add the broccoli slaw and cook for 2 to 3 minutes until just tender. Drain the slaw and set it aside.
Once the rice has cooled enough to handle, scoop about 1/2 cup portions and press each into a firm patty shape using your hands or a mold. Heat the same pan over medium-high heat and, if needed, add a little more sesame oil to prevent sticking. Cook the rice patties for 3 to 4 minutes on each side, until golden brown and crispy.
For the slaw, add a squeeze of lime juice and 1 Tbsp coconut aminos. If you like spice, consider adding 1 Tbsp crunchy chili oil as well.
To serve, place each turkey burger on top of or beside a crispy rice patty. Add a portion of the boiled slaw to the plate, either on the side or on top. Sprinkle with sesame seeds if desired, and enjoy.
Pro Tip: If you want to speed up this dish, you can also skip forming it into patties and make it into a stir fry. Cook the meat and slaw in the same pan. Once cooked, add in the cooked rice with coconut aminos.
