Tomato turkey pesto bowl
A bright and nourishing bowl of high-protein ground turkey, roasted veggies, and fresh tomato pesto. Topped with fresh cilantro, it is a wonderful flavor.

Ingredients (4 servings)
1 lb ground turkey
1 bag of Brussels sprouts
2 sweet potatoes
1 bunch cilantro
2 Tbsp olive oil (Get a 15% discount on my new favorite olive oil - Kosterina)
1 tsp garlic powder
1/2 tsp onion powder
3/4 tsp salt
red pepper flakes, optional for topping
1 container of tomato pesto

Knife & cutting board
2 additional bowls

Instructions
Preheat oven to 425°F. Line a sheet pan with parchment paper.
Wash and slice the Brussels sprouts and sweet potatoes. Place sweet potatoes in a bowl with water to remove starches. Drain after 5 minutes and pat dry with paper towel. Wash cilantro.
In a large bowl, toss the shredded Brussels sprouts and sweet potatoes with 1 Tbsp olive oil, 1/2 tsp salt, and pepper.
Spread veggies on the sheet pan in an even layer. Bake for 20–25 minutes, tossing once halfway through, until veggies are tender.
In a large skillet, heat 1 Tbsp olive oil over medium heat. Add ground turkey and cook until browned, about 7–9 minutes. Stir in salt, garlic and onion powder.
To serve, scoop mixed veggies into a bowl, then top with the ground turkey. Add a scoop of pesto to each bowl and mix until combined. Top with a few pieces of cilantro and enjoy!
Pro Tip: If you are roasting other veggies at the beginning of the week, go ahead and do the sweet potatoes at the same time!
