Veggie lettuce wraps with peanut sauce
Full of color and flavor, these lettuce wraps are versatile and easy to create into multiple delicious dishes. This one includes my favorite homemade peanut sauce recipe!
Ingredients (4 servings)
1 lb ground turkey [omit for vegetarian/vegan option]
1 bag large romain lettuce
1 cup brown rice (dry)
1 can chickpeas
2 bell peppers
2 zucchini
1 yellow onion
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
2 Tbsp olive oil
1 bottle of peanut sauce or make your own:
1/4 cup coconut aminos
4 Tbsp natural peanut butter (just peanuts and salt)
1 tsp garlic powder
1/2 tsp ginger powder
1/2 lime, juices
2 Tbsp water (adjust as needed to create the right consistency)
Sesame seeds (optional)
Red pepper flakes (optional)

Instructions
Preheat oven to 425°F.
Cook 1 cup of brown rice in a small pot or rice cooker according to package directions (usually 1 cup rice to 2¼ cups water). Once done, fluff and set aside.
Wash and slice the bell peppers, zucchini, and onion. Drain and rinse chickpeas. Dry with paper towel before seasoning.
On a sheet pan, toss bell peppers, zucchini, onion, and chickpeas with 1 Tbsp olive oil, ½ tsp salt, and a sprinkle of garlic and onion powder. Roast for 20-25 minutes, stirring halfway, until veggies are tender and chickpeas are slightly crispy.
Heat 1 Tbsp olive oil in a pan over medium heat. Add ground turkey and season with remaining garlic powder, onion powder, and a pinch of salt. Cook until fully browned and cooked through (about 8–10 minutes).
If making your own peanut sauce: In a jar or blender, add in the ingredients for the peanut sauce. Blend until combined.
Assemble your lettuce wraps with rice, roasted veggies, chickpeas, and ground turkey. Top with peanut sauce, red pepper flakes or sesame seeds, and enjoy! (You can also apply peanut sauce to ingredients before placing in the lettuce wraps if preferred).
