Goooooood morning and happy Sunday! With this weekend being a holiday, I am beyond thankful for all of the wonderful things that can be done with the additional time. Early Saturday morning my husband and I went on a lovely long walk, leaving our phones at home to slow down a bit. In the afternoon we celebrated my Dad’s birthday with a Scottish/Highland games theme. Today will be filled with a bit more rest & relaxation after church, and of course, a weekly grocery shop!
Now, before we jump into this week’s menu, I have a few things to share.
If you are new here, welcome, we are so glad for you to be part of the crew! You should be proud of yourself for supporting your life with healthy and delicious meals all week long!
One of my favorite things about writing this weekly guide is hearing from all of you - what you are cooking, where you are shopping, and what you are hoping to see more of. I am so excited to continue to provide you with healthy recipes, weekly menus, tips & tricks and more. Anytime you have questions or comments, do not hesitate to reach out to me via DM or through social media. If you are interested in even more content, you can find me on TikTok, Instagram, or YouTube.
For all of my vegetarian and vegan friends, I am especially excited to share Friday’s dinner meal with you!
Okay, that’s all for now. Let’s get into this week’s delicious menu.
Menu
Let’s make it easier for you to eat healthy, nourishing meals every day this week!
Before we jump in to the details, here are a few things to note so that we can make these recipes work best for you:
For every item that you are purchasing this week on the grocery list, we will ensure you have as little waste as possible. For example, if you are buying 1 cauliflower head, then there will be 2 recipes that each use a half a head of cauliflower. Say goodbye to the days of wasted vegetables that stare back at you from the crisper drawer at the end of the week!
Dietary restrictions? All of these meals are gluten-free & dairy-free and packed with veggies. For a more plant-forward option, swap the protein for beans.
Each recipe yields 4 servings—2 for dinner the night you cook and 2 for lunch the next day.
Cooking solo? You can freeze two servings for later or share meals with a friend.
For families, simply double the recipes to get two full meals on different days.
This meal plan starts Sunday night and ends Friday night. The weekends are for you to choose, or reuse something from the week.
