As I wrap up writing this guide, my desk is situated right in front of the window, giving such a great view of the snow that dusted North Carolina last night. For those of you on the East coast, I hope you enjoy this cozy time with your families. I can’t help but think while we got this beautiful snow, our friends over on the West coast are being hit by disastrous wildfires. My heart goes out to all those who have been impacted ~ if you are looking for further resources or support, a few of my fellow Sub stackers such as Jenn Lueke and Lauren Less are jumping in to help.~
Nature is wild and this world can be chaotic, but it is just a reminder that none of it is in our control. Thank goodness that the Lord is bigger than all of it and we can find true rest in Him.
With plenty of things for you to worry about, I hope this grocery guide is able to take one thing off of your mental checklist (or physical if that’s your jam) this week. Without further ado, I hope you enjoy some delicious and nutritious recipes.
Menu
Let’s make it easier for you to eat healthy, nourishing meals every day this week!
Here’s a peek at what you’ll be making this week:

Before we jump in to the details, here are a few things to note so that we can make these recipes work best for you:
Dietary restrictions? All of these meals are gluten-free & dairy-free and packed with veggies. For a more plant-forward option, swap the protein for beans.
Each recipe yields 4 servings—2 for dinner the night you cook and 2 for lunch the next day.
Cooking solo? You can freeze two servings for later or share meals with a friend.
For families, simply double the recipes to get two full meals on different days.
This meal plan starts Sunday night and ends Friday night. The weekends are for you to choose, or reuse something from the week.
