Summer; Summer; Summer; Summer - This is what is repeating in my head every day, as I wake up with excitement about the joy of this season especially. (Any High School Muscial fans?!) I don’t know about you, but May felt like the real kickoff to summer: graduations, birthdays, and celebrations galore. A reminder that the simple joys - gathering with friends and family, sharing delicious food around long tables, and enjoying the extended hours of daylight - all wonderful gifts!
The vibrant greenery in the garden is flourishing, the bright sunshine warms my skin each time I step outside, and the birds are singing loudly every single day - all such beautiful gifts of the new season.
I’m officially naming this a Simple Summer - more time outside, more quality time with friends & family, more time enjoying moments of joy, less rushing, less overbooking, and less stress. Of course, there will still be work, plans, trips, and full days, but I believe that setting an intention will prevent busyness from taking over. You may even notice a shift in the simplicity of recipes I’m sharing, so you too can take part in a Simple Summer. The reality is, all of us need rest and could probably use time to refresh. I encourage you to take some time to slow down and enjoy this summer.
Now, before I get too excited about what’s ahead, let me take you back through May with my most loved recipes, book recommendations, products I’m loving, and places I visited. These are some of my favorite blogs to read and get inspiration from, so I hope it sparks the same in you!
Recipes I loved
After reviewing all of the recipes I created in the past, I chose these as the top 3 for a few reasons.
Recipe #1: This Veggie lettuce wraps with peanut sauce was a highlight dish that received raving reviews from my first Healthy Habits workshop. Sharing them with the Tamarisk community was so much fun! While the peanut sauce took the cake, this is a versatile recipe that could easily be customized with different sauces.
