Happy Saturday! You know the feeling when something works out even though you feel like you have no clue what you’re doing? Well, it happened for me this week when I HARVESTED MY FIRST ZUCCHINI from my backyard garden!!! (garden progress updated here) If you can’t tell, I am very excited about this. First, because I absolutely love zucchini. But also, fruit & vegetables are the most difficult thing to grow because of what they require - more water, more sunlight, and more nutrients, so I was extra surprised at this success when I am still a beginner gardener. Thanks to the copious amounts of rain and warm weather, I was able to enjoy something straight for my backyard. It was so satisfying to make both the zucchini plate and the zucchini noodle bowl, both of which I am excited for you to try, too!

All to say, this made me realize the importance of trying new things and how nourishment plays a key role in flourishing. Whether you have been eating healthy all your life or experimenting with incorporating more fresh food onto your plate, I’m so glad you’re here. I want to encourage you to keep trying new things, whether it is a new ingredient or a different style of cooking, because you never know what great thing might result from it. This week’s recipes incorporate many fresh ingredients (whether from your local grocery store, the farmer’s market, or your backyard) and nourishing foods so you can flourish in your everyday life, too!
