Happy happy Saturday (and happy 4th of July weekend)! My hope is that this weekly letter finds you somewhere lovely, whether it’s at the park near your house, at the beach with your family, or even nestled in your favorite spot by the window looking out at all the bright flowers. I’m writing this guide overlooking a serene pond, nestled between the vibrant green trees in the mountains of North Carolina. It amazes me how calming the colors of the outdoors can be - the light blue of the sky and the vast expanse of mixed greens across the landscape.

Speaking of colors, have you ever noticed how vibrant fresh produce is?! After all these years, you would think I would be used to it by now, but every time I am picking up groceries, I still ooh and ahhh over just how ruby red the strawberries are or how a cabbage can be that deep of a purple!

Well, it’s not a coincidence. Our brains are wired to search for bright, colorful foods because the different colors signify to our bodies about the phytonutrients they have to offer. This might also be the reason why so many brands use highlighter packaging and food coloring - they are trying to tap into that natural desire - without offering the real benefits that produce provides. Whole, natural foods offer a variety of colors and flavors to try, with the true nutrients that our bodies crave. I love to incorporate a lot of diversity in my own diet to support gut health, a key to overall health. This week’s recipes are quick and easy - with minimal cooking time needed, so you can get in a variety of colors and nutrients, then get back to enjoying your summer.
